After 25 years inside hospitality operations across the UK, Europe, and Asia Pacific, I built Digby + Fox to give operators the one thing most consultancies can't: someone who actually gets in the business and does the work.
I've opened 30+ sites. Delivered £25M+ in revenue. Led teams across food halls, restaurant groups, hotels, pubs, and multi site brands. From RH to Coppa Club, Mitchells + Butler to Beef + Liberty Hong Kong, TGI Fridays to Metropolitan Pub Co. Every one of those taught me something about what works and what doesn't.
Today, I work as a fractional fixer. I embed with your leadership team, diagnose the real problems, and fix them. Then I build the systems and capability so you don't need me anymore.
HOW I WORK
Diagnose: I get inside the business. Walk the floor, read the numbers, talk to the team. Within days I'll tell you what's actually going wrong and what's fixable fast.
2. Fix I build the plan and start executing. Systems, processes, team structure, commercial controls. Not a PowerPoint. Working solutions that your team can run.
3. Build I embed with your team until the foundations are solid and the results are holding. Then I hand it over and step back. The goal is always to work myself out of a job.
